Dubai’s dining scene has started October with a mix of openings that feel genuinely different from one another: live-fire cooking in Wasl 51, an old-school New York deli in DIFC, a design-led Emirati café, a small-batch roastery in Al Quoz and a waterfront Italian restaurant in JBR.

This five-stop shortlist focuses on places that are newly open or entering a fresh chapter this season. Each has a clear reason to visit, whether that is a distinctive menu, an unusual format or a setting that turns a meal into more than a quick reservation.

1. Aatish — live-fire cooking at Wasl 51

Aatish is built around the energy of an open flame. The Wasl 51 restaurant was created by friends Reza Namazi, Amin Ebra, Alex Augusti and chef Abdul Hakim, with travel memories and live-fire techniques shaping a menu intended for the whole table.

The cooking moves across several influences rather than staying in one lane. Hawker’s Sup Kambing nods to Singapore, Sinan’s Sizzling Prawns brings garlic, chilli and butter together, and the fire-roasted T-Rex bone marrow makes the grill the centre of attention. It is the strongest pick here for groups that like ordering widely and sharing everything.

2. Hudson & Rye — a proper New York deli in DIFC

Hudson & Rye takes a deliberately straightforward route: generously filled sandwiches, classic deli flavours and none of the ceremony of fine dining. The DIFC Square address positions itself as the UAE’s New York-style delicatessen, serving the kind of food designed to be eaten with both hands.

Pastrami on rye, Reubens, tuna melts and house pickles form the core of the offer, while breakfast and other diner-style staples broaden the reasons to visit. For DIFC workers, it is an easy lunch option; for everyone else, it offers a nostalgic alternative to the district’s polished tasting menus and business dinners.

3. TRIO — a home-grown café lands in Umm Suqeim

Dubai-born TRIO has opened a new Jumeirah outpost on 22nd Street in Umm Suqeim 2. Founded by Emirati coffee specialist Aysha Bin Huwaireb, the brand links its identity to the idea of three, carrying that concept through the architecture, material choices and menu.

The café pairs speciality coffee with an all-day offering in a design-led room that feels considered without becoming formal. It works equally well for a morning coffee, a casual meeting or a slower catch-up, making it one of the more flexible additions to this month’s list.

These first three openings cover dinner, lunch and the all-day café crowd; the next two add a more technical coffee experience and a family-friendly Italian destination by the water.

That range is what makes the current wave of openings useful: it is not simply another collection of special-occasion restaurants. There are places here for quick sandwiches, serious coffee, group dinners and relaxed family meals.

4. Kairos Coffee Assembly — coffee roasted on site in Al Quoz

Kairos Coffee Assembly is aimed at people who want to understand more of what happens between green bean and finished cup. Founded by Shiraz Sarwar, the Al Quoz venue is home to the UAE’s first Bellwether Shop Roaster, allowing the team to roast in small batches within the café itself.

Single-origin coffees and V60 pour-overs lead the drinks programme, with pastries and a concise food selection alongside them. The visible roasting process gives the visit a workshop-like quality, while the industrial Al Quoz setting makes it a natural addition to a morning spent around the district’s galleries and creative spaces.

5. Pepe Cucina — Italian food and waterfront views in JBR

Pepe Cucina has opened at Address Beach Resort with handmade pasta, wood-fired cooking and familiar Italian favourites at the centre of the menu. The concept is spread across several dining areas, giving it room to move from casual daytime meals to longer evenings overlooking JBR and Ain Dubai.

The restaurant is particularly practical for groups and families. Alongside the trattoria-style food, there is a Saturday brunch and a setting designed for social, shareable meals rather than a tightly structured fine-dining experience. It is the pick on this list for visitors who want a broad Italian menu with a resort backdrop.

How to choose where to go first

Start with Aatish for a lively shared dinner, Hudson & Rye for a no-fuss sandwich, TRIO for an easy café stop, Kairos for a more focused coffee experience and Pepe Cucina for an Italian meal with a waterfront view. Opening hours, menus and reservation policies can change, so checking directly with the venue before travelling is still the sensible final step.
